Destemming. Crushing. Cooled at 8 ° C for 3 days with pumping over under CO2 to promote the expression of the fruit. Autonomous temperature rise. Fermentation in indigenous yeasts at 26 ° C with alternating punching down - pumping over. Vatting 4 weeks minimum and heating at 28 ° C 4 days before devatting. FML in stainless steel vats. Aging 1 year in barrels of 500 and 300L. Gentle filtration before bottling.

Only 1000 bottles of this cuvée are produced.

Tasting note:. The palate is corpulent, with aromas of black cherries and blackberries evolving towards notes of freshly roasted coffee. Elegant and racy finish.
