Destemming. Crushing. Skin maceration for 6 hours. Settling after 48h stalling. Fermentation at low temperature for 3 to 4 weeks. Aging for 2 months on fine lees.

Tasting note: Intense aromas of exotic fruits and citrus. The palate is mineral, saline and long.

Agreements:  Risotto with scallops, grilled octopus, bouillabaisse, seafood ...
