Tasting :
An intense, generous wine with aromas of black cherry, blackberry and spicy notes. The tannins are silky and elegant. The finish is persistent with smoky notes, following maturation partly in oak barrels.
If possible, open ½ h before drinking.
Wine pairing :
A delicious accompaniment to prime rib, stew and duck breast.
Winemaking
Destemming. Crushing. Chilled to 8°C for 3 days with pumping over under CO2 to encourage fruit expression. Autonomous temperature control. Fermentation without yeast at 23°C with daily pumping-over. Vatting for 3 weeks. Malolactic fermentation in stainless steel tanks. Ageing in vats and barrels. Gentle filtration.
